BANANA OATMEAL COOKIES
YIELD: about 30 cookies PREP TIME: 10 minnutes COOK TIME: 10 minutes
1/2 cup unsalted butterat room temperature
1 large egg
1 1/2 tsp pure vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 tsp salt
2 teaspoons ground cinnamon
3 1/4 cup old fashioned oats
1 cup semi-sweet chocolate chips
Scrape the sides of the bowl and then blend in the egg until fully incorporated. Scrape down the sides of the bowl again and add in the mashed bananas and vanilla.
Gently add the bread mixture to the banana mixture and mix until just combined.
Scrape the sides of the bowl and then stir to recombine.
Use a medium cookie scoop (about 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for 9-11 minutes.
Remove cookies from the oven and lightly press on the tops of each cookie with the bottom of a drinking glass. Since these cookies do not spread much, this can help give them a traditional cookie shape.
